Description

This easy apple strudel recipe wraps tender cinnamon-spiced apples in flaky puff pastry for a cozy treat. It’s always a hit and perfect for dessert or a sweet snack.


Ingredients

  • 1 batch vegan puff pastry
  • 4 medium apples, peeled, cored, and thinly sliced (Granny Smith or Honeycrisp)
  • ¼ cup brown sugar or coconut sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ cup raisins
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • ½ cup breadcrumbs
  • Plant-based milk, for brushing
  • Powdered sugar, for dusting


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced apples, brown sugar, cinnamon, nutmeg, raisins, lemon juice, and cornstarch. Toss until the apples are evenly coated and let sit for 10-15 minutes.
  3. On a lightly floured surface, roll out half of the puff pastry sheet into a 10×12 inch rectangle and place it on a parchment-lined baking sheet.
  4. Visually divide the puff pastry into three vertical sections, reserving the center for the filling.
  5. Sprinkle half of the breadcrumbs evenly over the center section of the puff pastry.
  6. Spoon half of the apple filling down the center, leaving a 1.5 inch space at the top and bottom for sealing.
  7. Cut horizontal 1-inch wide slits on each side of the outer sections of the pastry to create strips.
  8. Starting at the top, fold the strips diagonally over the filling, alternating sides to form a braid.
  9. Fold the top and bottom edges over the filling and tuck them under to seal.
  10. Repeat the process with the second half of the puff pastry and remaining filling to make a second strudel.
  11. Brush both strudels with plant-based milk for a golden finish.
  12. Bake for 25-30 minutes, or until the pastry is golden brown and flaky.
  13. Cool slightly and dust with powdered sugar before serving.
