  • ⅔ cup Puori PW1 vanilla whey protein powder (60 g)
  • 1½ teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon fine salt

  • 1 cup diced apple, cut to about ½-inch pieces


Instructions

  1. Prepare Oven and Pan: Preheat your oven to 350°F (175°C). Lightly mist a standard muffin pan with cooking spray or line it with muffin liners and mist those, or use a silicone muffin pan to prevent sticking.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, unsweetened applesauce, Greek yogurt, egg, and pure vanilla extract until smooth and well incorporated.
  3. Add Dry Ingredients: To the wet mixture, add the quick cooking oats, all-purpose flour, cane sugar, vanilla whey protein powder, ground cinnamon, baking powder, baking soda, and fine salt. Stir gently until the ingredients are just combined.
  4. Fold in Apples: Carefully fold in the diced apple pieces to evenly distribute them throughout the batter without over-mixing.
