Ingredients
1 apple (Granny Smith, Honeycrisp, Braeburn, or Pink Lady)
½ tsp ground cinnamon (for apples)
1 cup + 2 tbsp all-purpose flour (141 g)
½ tsp ground cinnamon (for batter)
⅛ tsp ground nutmeg
½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, melted (112 g)
¾ cup packed light brown sugar (156 g)
1 large egg
1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (180°C). Line an 8×8-inch pan with parchment or grease lightly.
- Peel, core, and chop apple into small chunks (¾–1 cup). Toss with ½ tsp cinnamon and set aside.
- Whisk flour, remaining cinnamon, nutmeg, baking powder, and salt in a bowl.
- In a large bowl, whisk melted butter and brown sugar until smooth. Add egg and vanilla; whisk until combined.
- Stir dry ingredients into wet until no streaks remain. Fold in cinnamon-coated apples.
- Spread batter evenly in prepared pan. Bake 22–25 minutes until set and a toothpick comes out with moist crumbs.
- Cool fully before lifting out of pan and slicing into bars.
Notes
- Use grated apple (⅔ cup) for even texture without chunks.
- Substitute dark brown sugar (½ cup) + ¼ cup white sugar if light brown unavailable.
- Double batch in a 9×13-inch pan, bake 26–28 minutes.
- Mix in nuts, dried fruit, or chocolate chips for extra flavor.
- Chill fully before slicing for neat, clean cuts.
