Description

Ingredients

Dry Ingredients

  • 4 ½ cups (576 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar

Wet Ingredients

  • 1 cup (2 sticks / 226g) salted butter, room temperature
  • 1 cup (224g or 8 ounces) vegetable oil
  • 1 cup (200g) granulated sugar
  • 1 cup (125g) confectioners sugar
  • 2 large eggs (3.50 – 4.0 ounces each), room temperature
  • 2 teaspoons vanilla paste


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line several baking sheets with parchment paper to prevent sticking and ensure even baking. If using a convection oven, 350°F (175°C) is recommended.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking soda, and cream of tartar until well combined. Set this mixture aside.
  3. Cream Butter, Oil, and Sugars: Using a stand mixer fitted with the paddle attachment, cream the room temperature butter, vegetable oil, granulated sugar, and confectioners sugar on medium-high speed until the mixture becomes light and fluffy, scraping down the bowl sides as necessary.
  4. Add Eggs: Lower the mixer speed to medium and add the eggs one at a time, mixing just until each egg is incorporated before adding the next.
  5. Add Vanilla: Mix in the vanilla paste until fully combined.
  6. Add Flour Mixture: Reduce the mixer speed to low and gradually add the dry flour mixture in three additions, scraping down the sides of the bowl as needed to ensure all the flour is incorporated.
  7. Portion Dough: Using a 2-tablespoon scoop, drop rounded portions of cookie dough onto the prepared baking sheets, spacing the dough scoops at least one inch apart to allow room for spreading.
  8. Bake: Bake the cookies in the preheated oven for 8 to 10 minutes or until the edges begin to darken lightly, indicating they are done but still soft inside.
