Description

ABC Soup is a healthy, nutritious, and comforting soup made with chicken drumsticks, potatoes, carrots, tomatoes, celery, onions, and ginger. Seasoned simply with salt and pepper, it’s a flavorful Chinese-Malaysian inspired soup perfect for a light meal or appetizer.


Ingredients

  • 450500 grams chicken drumsticks or bone-in chicken (about 15 oz)
  • 1 potato, cut into large cubes
  • 1 carrot, cut into large cubes
  • 2 tomatoes, cut into wedges
  • 1 onion, cut into large cubes
  • 1 thumb-sized piece of ginger, sliced thinly
  • 1 stick celery, sliced thinly
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • 23 spring onions, thinly sliced
  • 1½ cups water (or more as needed)

Instructions

  1. Prepare all vegetables by cutting them into large cubes and slices.
  2. Fill a large heavy-bottom pot with water and bring to a boil. Add chicken pieces and blanch for 1–2 minutes. Drain and rinse with cold water.
  3. Return the chicken to the pot. Add carrot, potato, onion, celery, and ginger slices. Pour in water, ensuring the ingredients are fully covered. Season with salt.
  4. Bring to a boil, then reduce heat to low-medium. Cover and simmer for 30 minutes.
  5. Add tomatoes and continue cooking for another 15 minutes, until chicken and vegetables are tender.
  6. Season with freshly ground black pepper. Taste and adjust salt if needed.
  7. Transfer soup to a serving bowl and sprinkle with chopped spring onions. Serve warm.

  • Adjust water quantity to achieve desired soup consistency.
  • Optional: add other vegetables like corn or bell peppers for extra flavor.
  • Blanching the chicken first helps remove impurities and keeps the soup clear.
