Instructions
- Heat the cream: Place a saucepan over medium heat and add 1 cup of heavy whipping cream. Warm gently until it begins to get warm but not boiling.
- Add cheese and spices: Once the cream is warm, add 2 cups of freshly grated colby jack cheese, 1/4 teaspoon each of paprika, chili powder, and garlic powder, along with 1 tablespoon of cornstarch to the saucepan.
- Whisk until thick: Continuously whisk the mixture until it becomes thick and creamy, which should take around 5 minutes or less. Be sure to stir constantly to prevent the sauce from burning or sticking to the pan.
- Serve immediately: Remove from heat and serve the nacho cheese sauce hot as a dip for chips, or as a topping for nachos, tacos, quesadillas, or any Mexican-themed dish.
