Description

A quick and flavorful 5-minute cannellini bean recipe perfect for a light meal or side dish. This easy sauté combines aromatic spices with tender cannellini beans, enhanced by fresh onion and garlic, and is best served with a fresh tomato cucumber salad, olives, and creamy tzatziki.

Ingredients

Beans & Spices

  • 1 cup cannellini beans, canned
  • 1/2 tsp coriander
  • 1/2 tsp mint
  • 1/2 tsp basil
  • 1/2 tsp cumin
  • Optional: red pepper flakes to taste

Vegetables & Aromatics

  • 1/2 onion, chopped
  • 1 garlic clove, minced

Other

  • Olive oil or coconut oil, for sautéing (about 1-2 tbsp)

Instructions

  1. Prepare the ingredients: Rinse and drain the cannellini beans thoroughly. Chop the onion into small pieces and mince the garlic clove finely to ensure even cooking and flavor distribution.
  2. Sauté aromatics: Heat a non-stick pan over medium heat and add olive oil or coconut oil. Add the chopped onion and minced garlic, sautéing for about a minute until fragrant and slightly softened but not browned.
  3. Add the beans: Stir in the drained cannellini beans and cook for an additional minute to warm the beans through and mingle the flavors.
  4. Spice it up: Sprinkle in the coriander, mint, basil, cumin, and if desired, a pinch of red pepper flakes. Stir well to coat each bean evenly with the spices for a harmonious flavor throughout the dish.
  5. Serve: Remove from heat and serve immediately with a fresh tomato and cucumber salad, olives, and a side of tzatziki for a complete Mediterranean-inspired meal.

Notes

  • For more heat, add extra red pepper flakes or a dash of cayenne.
  • Use fresh herbs if available for a more vibrant flavor.
  • This recipe can be doubled easily for more servings.
  • For a vegan version, ensure the side tzatziki is dairy-free or omitted.
