Instructions
- Preheat Oven: Preheat your oven to 400 degrees F (204 degrees C). If you’re using wooden skewers, soak about 8 of them in water for at least 15 minutes to prevent burning during baking.
- Prepare Baking Sheet: Line a baking sheet with foil and coat it with nonstick spray or parchment paper for easy cleanup and to prevent sticking.
- Mix Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, chopped parsley, olive oil, coriander, allspice, cumin, paprika, onion powder, garlic powder, kosher salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
- Shape Koftas: Divide the mixture into 8 equal portions. Using the palms of your hands, roll each portion into a ball and then shape into an oval to form the kofta kebabs.
- Assemble with Skewers: Arrange the shaped koftas spaced evenly on the prepared baking sheet. Insert a soaked wooden skewer horizontally through the bottom of each kofta to form kebabs.
- Bake: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes. Halfway through baking, carefully flip the kebabs to ensure even cooking and a lightly golden-brown exterior. Bake until the internal temperature reaches 165 degrees F (74 degrees C).
- Serve: Remove from the oven and serve warm alongside a fresh salad, lemon dill yogurt sauce, and warm pita bread. Garnish with extra fresh herbs if desired.
