Ingredients

Chicken

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons virgin olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt or to taste
  • ¼ teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes

Bang Bang Sauce

  • ½ cup mayonnaise
  • ⅓ cup Thai sweet chili sauce
  • 1 teaspoon Sriracha, or more to taste
  • 1 tablespoon honey
  • Parsley for garnish


Instructions

  1. Prepare the Chicken: Mix together the diced chicken, virgin olive oil, smoked paprika, garlic powder, kosher salt, and black pepper until the chicken cubes are evenly coated with all the seasonings.
  2. Thread the Skewers: Thread 4-5 chicken cubes onto each wooden skewer, making sure to evenly space them. Remember to soak the wooden skewers in cold water for about 30 minutes before threading to prevent burning during cooking.
  3. Make the Bang Bang Sauce: In a small bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha, and honey. Stir well until fully blended, yielding about 1 ¾ cups of sauce.
  4. Brush Chicken with Sauce: Divide the sauce in half, placing one portion aside for later use. Brush the remaining sauce evenly over the chicken skewers to coat them thoroughly.
  5. Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for 5 minutes to ensure it is ready for cooking the chicken skewers.
  6. Cook the Skewers: Arrange the skewers in a single layer inside the air fryer basket. Depending on the size of your air fryer, cook in batches if needed. Air fry the chicken skewers at 400°F for 12-15 minutes, flipping them halfway through for even cooking. Check that the internal temperature of the chicken reaches 165°F to ensure doneness.
  7. Finish and Serve: Remove the cooked skewers from the air fryer and transfer them to a serving plate. Generously brush the reserved Bang Bang sauce over the hot skewers and sprinkle fresh parsley on top for garnish. Serve immediately and enjoy!
