Description

Ingredients

  • Apple Cake:
  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup canola oil or melted coconut oil
  • 1/2 cup unsweetened applesauce
  • 2 teaspoons pure vanilla extract
  • 3 cups peeled and diced apples
  • 1 cup chopped walnuts
  • Optional Caramel Drizzle:
  • 4 tablespoons vegan butter
  • 1/2 cup brown sugar
  • 2 tablespoons non-dairy milk

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, cinnamon, and salt.
  3. Add in the oil, applesauce, and vanilla extract. Stir until combined. The batter will be thick.
  4. Fold in the diced apples and chopped walnuts. Use your hands if necessary to mix evenly.
  5. Press the batter evenly into the prepared pan.
  6. Bake for 45–50 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool for 20 minutes while you prepare the caramel drizzle.
  8. For the caramel drizzle, heat vegan butter, brown sugar, and non-dairy milk in a small saucepan over medium heat until melted and boiling. Stir constantly and let boil for 2 minutes. Remove from heat.
  9. Drizzle the caramel over the warm cake. Let cool for an additional 10 minutes before serving.

Notes

  • You can use any neutral oil such as avocado, canola, or melted coconut oil.
  • Substitute gluten-free flour blend to make it gluten-free.
  • Use walnuts or pecans, or omit nuts entirely for a nut-free version.
